Sourced from the vanilla orchid, our green pods hold the promise of rich flavor and exquisite aroma, but it takes time and meticulous care to unlock their full potential.

Over nine months, our vanilla beans ripen on the vine, turning from vibrant green to a golden yellow—a sign of readiness for harvest. Handpicked at the peak of ripeness, the pods undergo a hot water blanching process before being swiftly wrapped in wool blankets. This ensures they remain warm during the crucial two-week sweating period, preventing mold growth and setting the stage for flavor development.

Day and night, our dedicated workers carefully manage the blankets, bringing them outside to bask in the sun during the day and sheltering them at night or during rain. This meticulous process continues for two weeks until the vanilla loses some of its moisture, setting the stage for the next phase of curing.

For the following two months, the blankets are opened during the day to expose the vanilla beans to the sun, harnessing its transformative power to inhibit mold growth and enhance the development of complex aromas. Through this careful regimen, the enzymes, cellulose, and starches in the vanilla bean are transformed, giving rise to the signature flavors we associate with vanilla.
